AVOCADO AND CHICKEN SALAD

If salads are your favourite, consider trying our delicious fresh Greek salad. If you’re new to eating salads, this recipe is an easy fix and you get lots of roughage and nutrients packed into it.

Ingredients
  

Dressing/Marinade:

  • 1 tbsp minced garlic
  • 2 tbsp olive oil
  • 2 tbsp brown sugar, raw honey or stevia choose an option that works with your lifestyle
  • 1 tbsp dried basil or fresh basil to taste
  • 1 tbsp salt I like Redmans Real Salt

Salad:

  • 4 boneless chicken thigh fillets you can leave the skin on
  • 1 sliced avocado
  • 5 cups washed and dried lettuce leaves
  • 1 cup sliced cherry tomatoes
  • 1/4 cup basil leaves
  • 1/2 cup organic kale microgreens or if you want a spicy kick, try radish microgreens
  • 1/2 cup mozzarella cheese
  • salt and pepper to taste

Instructions
 

Step 1: Marinade the Chicken

  • Mix the marinade ingredients into a bowl. Brush a light coating onto the chicken prior to cooking. Use the remaining marinade as your dressing.

Step 2: Cooking the Chicken

  • Heat one tbsp of oil over medium-high heat and then grill the chicken fillets on both sides until, crispy and golden brown.

Step 3: Serving

  • Start by slicing the chicken.
  • Next, prepare the salad with avocado slices, lettuce, microgreens, mozzarella cheese, some tomatoes, and chicken. Now sprinkle basil, add salt and pepper, and then drizzle the remaining dressing

Chicken Fajitas With Garlic Sauce

Super quick and easy meal for lunch or supper!

Ingredients
  

  • 600 g Chicken
  • 30 g Butter
  • 200 g Greek Yogurt
  • 1 Bell Pepper (or peppers of choice)
  • 1 clove Garlic
  • 1 med Red Onion
  • Soy Sauce to taste
  • Fresh Dill to taste
  • Favourite Microgreen to taste
  • Tortillas (or not if low carb)
  • Salt and Pepper to taste

Instructions
 

  • Cut the chicken fillet in thin slices, then marinate it with soy sauce, salt and pepper
  • Cut and remove the seeds from the bell pepper, then cut into thin slices
  • Peel and cut the onion in half and then into slices
  • Melt butter and sauté chicken for a couple of minutes and then add the veggies. Sauté until vegetables are at the desired tenderness. Usually about 15 min on medium high heat.
  • For the Sauce:
    Peel garlic clove, crush it and slice small. Put garlic in the olive oil, mix with salt, then mis that with the Greek yogurt. Fine cut some dill to taste and add it to the sauce.
  • If using tortillas, place the chicken and veggies ontop, drizzle some garlic sauce, top with some micrgreens, wrap it up and enjoy! If not using tortillas, simply add it all to your plate and eat with a fork. 🙂
